Can one of Italy’s great gelato centres turn specialist depth into a winning case?

Bologna is where the modern gelato machine was invented and industrialised: Bruto Carpigiani patented the spatola elicoidale that became the Autogelatiera in 1943, and his brother Poerio founded Carpigiani Bruto with its headquarters in Bologna in 1946. That origin still shapes the city's claim, even though the company's functioning Gelato Museum and Gelato University campus sit not in Bologna itself but 15km away in Anzola dell'Emilia, and their one confirmed satellite inside the comune, at FICO Eataly World, closed with the park itself in February 2024. Within the comune boundary, though, gelato is unusually dense and specialist: Gambero Rosso's Gelaterie d'Italia guide (reported by Il Resto del Carlino, 22 June 2026) gave four Bologna shops its top Tre Coni rating and six more Due Coni, and an independent critic, Dissapore, converged on several of the same names in its own June 2026 ranking. Multiple shops - Cremeria Scirocco since 2005, Il Gelatauro since 1998, La Sorbetteria Castiglione since 1994, Stefino since 1998 - have run under the same ownership for two to three decades inside one mid-sized city. The Financial Times' 2022 list of the world's 25 best ice-cream shops included exactly one Bologna candidate, Il Gelatauro. The case for Bologna is not one landmark but unusual specialist continuity concentrated in a single comune, sitting next door to, but distinct from, the industry that taught the rest of the world to make gelato.

    Cremeria Santo Stefano

    A small shop on Piazza Santo Stefano that Dissapore's critic singles out for restraint rather than force - delicate spicing and an elegant crema base rather than maximalism - while working almost everything, down to its own cacao and jams, in a visible in-house lab. It carries both the top rating in the region's dedicated gelato guide and third place in an independent critic's ranking published the same month.

    Cremeria Scirocco

    Andrea Bandiera left a career in computing to found Cremeria Scirocco in the spring of 2004, opening the lab on Via Barelli in March 2005; two decades on it holds the same top guide rating and a critic's-choice ranking, with a visible-lab commitment and a savoury/vegan range that goes further than most of its Bologna peers.

    Il Gelatauro

    The one Bologna shop with an international critical citation independent of the Italian guide system: the Financial Times named it among the world's 25 best in 2022, quoting a specific claim that Alice Waters of Chez Panisse is among its regulars. Twenty-six years under the same founder, and still rated by Gambero Rosso as of mid-2026.

    Sablé Gelato

    The most specialist-committed shop found in Bologna by design rather than by marketing: minimum production, no held stock, ingredients that are allowed to change the recipe rather than being standardised against it. An outside national guide and an outside competition have already validated the same approach independently of each other.

    One of the longer-running specialists in the set, carrying a direct line of transmission from Pino, a gelateria the shop's own site calls 'legendary,' run by the Negrini family for over 60 years. Continuous open-lab production has been the stated model since 1994, not a recent addition.
