Does an ingredient-led specialist scene make Barcelona Spain’s leading contender?

Barcelona's case rests on two things that reinforce each other. Its specialists are ingredient-led in a way that is checkable rather than claimed — makers who travel for small producers, name their suppliers, and start from the product rather than a recipe. And it has an unusually dense culture of professional recommendation: a single Spanish survey in 2026 produced four named makers recommending four different Barcelona shops, each with a specific reason, which is more attributable professional endorsement than any other city in this research holds.

    A Spanish champion who came to ice cream the long way round, from years in high-level pastry, and who describes the shop as a laboratory of flavours rather than a gelateria. Each flavour starts from an ingredient found by travelling Catalonia and Spain for small producers, not from a recipe. Another champion picked out his Mango Campeon — mango, rose and almond — as one of the most surprising ice creams he had tasted.

    Good pastry and good ice cream under one roof is a harder problem than it sounds, and a named professional picked Morreig out for solving it. Three founders — a fermentation specialist from Alsace, a Hofmann-trained pastry chef who taught the subject, and a baker who twice made the French national bread team — opened it on Verdi in 2023 around fermented doughs.

One new flavour every week, five fixed, four rotating — and a maker who treats how taste is perceived as the actual subject rather than a garnish.
