Shiseido Parlour Ginza Salon de Cafe

Tokyo's technical-precision case does not require novelty: Shiseido Parlour is the opposite pole from Suzukien's engineered concentration scale, a business that has spent over a century treating access to its own 1902 recipe as something to restrict even internally, guarded in a room most of its own staff cannot enter. Set beside a 19th-century tea house re-engineering matcha into seven numbered intensities a few kilometres away, it makes Tokyo's argument for itself: this city holds both the guarded original and the graded experiment at once.

What we know

  • Japan's first soda fountain, opened 1902 inside the Shiseido pharmacy in Ginza to sell soda water and ice cream, at the time still an unfamiliar food in Japan, per the company's own history page
  • Ice cream is still made in a dedicated 'ice cream room' at the Ginza main store that only a limited number of even Shiseido's own staff may enter, and the site states the original-era flavour is maintained unchanged there
  • Survived the total destruction of the 1923 Great Kanto Earthquake, which levelled the Ginza building, and reopened within two months in a temporary structure
  • An independent Ginza food guide (Otonano Shumatsu, Kodansha) names Shiseido Parlour among five defining Ginza ice cream destinations
  • Historically sold takeaway ice cream in pots and, per the company's own account, staff answered emergency night-time requests from customers wanting ice cream for a sick family member in the era when it was still a luxury food
