Taichung · ice cream
MINIMAL
This is the reason Taichung is in the cohort at all: the only ice-cream operation on earth holding a Michelin star, independently confirmed by Taipei Times, 遠見/GVM and La Vie, with a named, checkable chef and a technically explicit production concept (temperature-as-structure).
What we know
- First ice-cream establishment in the world awarded a MICHELIN star, in the 2024 MICHELIN Guide Taiwan, confirmed by name in Taipei Times' 2024-08-28 report on that year's new star restaurants
- Direct spin-off of Michelin one-star restaurant 澀Sur-, sharing founder Arvin Wan, who trained at 高雄餐旅大學 (National Kaohsiung University of Hospitality and Tourism) after studying at 台中高農
- Seven-course tasting menu spans a claimed 376-degree temperature range, from 180°C to -196°C (liquid nitrogen), using Taiwanese seasonal ingredients such as loquat, edamame, ginger lily and osmanthus, per 遠見/GVM's opened 2024-10-04 feature
- A MICHELIN Guide inspector is quoted, via 遠見/GVM, defending the star: 'people are willing to spend time experiencing and tasting a proper set menu... if it's good enough, why not a star?' -- an independent named-outlet relay of Michelin's own reasoning, not the shop's self-description
- Deliberately abandoned its tasting-menu-only format after winning the star to refocus on takeaway single-scoop gelato, a reversal covered as news in its own right by UDN 500輯 (2025-08-25)
