Taichung

The first ice cream in the world to be awarded a Michelin star is not in Rome or Tokyo. What is it doing in Taichung?

Taichung holds a distinction no other ice-cream city in this project can claim: MINIMAL, a takeaway gelato counter spun off from the Michelin-starred restaurant 澀Sur-, became the first ice-cream establishment in the world to be awarded a Michelin star, in the 2024 MICHELIN Guide Taiwan. Founder-chef 萬士傑 (Arvin Wan) builds seven-course frozen-dessert menus spanning a stated 376-degree temperature range, from 180°C down to -196°C liquid nitrogen, using Taiwanese seasonal produce. Independently of that, the city's own dessert-shop culture runs back to the Japanese colonial period: 幸發亭 (Xing Fa Ting), Taichung's originator of 蜜豆冰 (honey bean shaved ice), was founded in 1938 by 陳溪, selling from a pushcart outside Taichung Station before anchoring the old First Market for decades. Whether MINIMAL's Michelin-adjudicated fine-dining format and a colonial-era shaved-ice institution belong in the same editorial case, or represent two different arguments for the city, is the open question this file hands off.

    This is the reason Taichung is in the cohort at all: the only ice-cream operation on earth holding a Michelin star, independently confirmed by Taipei Times, 遠見/GVM and La Vie, with a named, checkable chef and a technically explicit production concept (temperature-as-structure).

    A named, checkable maker with an explicit two-country technical lineage (Japanese pastry precision, Sicilian granita tradition) and a rationed-supply signal that is independently reported rather than self-claimed -- the strongest modern Italian-technique candidate in Taichung.

    If Taichung's dessert-shop culture back to the Japanese colonial period is part of this city's case, 幸發亭 is the primary source-backed example: a named founder, a specific 1938 date, and an invented dish (蜜豆冰) that Mirror Media credits as a Taichung-wide identity marker.
