The reconstitution of a gelato factory that ran in Lisbon for sixty-three years. When the Avenida de Berna works closed in 1996 the recipes and the machinery survived, and in 2014 the family started making again — with the same copper pots, forged in Lisbon by an Italian coppersmith, still used to toast the almonds. It makes what it sells and says what is not in it.

What to order
The cassata, or the cilindro rolled in ground toasted almonds with fresh strawberry sauce.

What we know

  • Direct continuity from the family gelato factory that ran on Avenida de Berna from 1933 until 1996
  • The machines, moulds, utensils and recipes were carried over from it
  • Almonds still toasted in Arcangelo Sala's original copper pots, forged in Lisbon by the Italian Biaggio Conte
  • States plainly that the gelato contains no emulsifiers, preservatives, thickeners or colourings, as it did originally
  • Also produces the gelato sold at A Veneziana, the family's protected 1930s shop
