What we know
- Founded 1977 by Héctor Ambieni, who trained from age 21 at a Flores heladería before opening his own shop in a then-unfashionable Belgrano side street; colleagues told him he'd fail
- Daily production begins around 7am, historically run personally by the founder, who tasted every batch before deciding whether to offer it
- Three generations now work the shop: the founder's children (Oscar, Marcelo, Silvana), a nephew, and grandchildren
- Distinct dulce de leche line-up: dulce de leche, super dulce de leche, dulce de leche granizado, and a dulce de leche-filled bonbon variant, alongside a signature sambayón
- 52 flavours currently, with vintage flavours (marrón glacé, crema rusa, higos con nuez, quinotos al whisky) kept on the board for older regulars
