Bizzarro Gelato
Caramel with soy sauce, strawberry with olive, pineapple with pepper — and a rule that at least half the menu must be strange, with one flavour retired every month. Behind the provocation is an unusually precise technical position: they serve four to six degrees warmer than commercial gelato, deliberately, and argue for why.
What to order
Whatever is strangest this month. The tasting flights exist for exactly this.
What we know
- A twelve-flavour seasonal menu of which at least six must be strange, with one rotating out every month
- No colourings at all, not even natural ones
- An explicit technical position on serving temperature: served at minus fourteen to fifteen degrees against the commercial minus eighteen to twenty, as a compromise between structure, melting time and flavour
- The pastry chef trained in Bologna
- Its ice lollies were chosen for the first Le Monde d'Hermes in Lisbon
