녹기 전에 (Before It Melts)

A single named maker who has personally invented roughly 400 flavours over nine years rather than settling on a fixed menu, anchored by a rice gelato that names its region (Icheon) the way an Italian gelateria would name a Piedmont hazelnut. The daily-changing calendar and the owner's own account of why it changes are unusually well documented for a Seoul candidate.

What we know

  • Owner Park Jung-soo, a KAIST graduate who left a corporate engineering career, has personally developed roughly 400 different flavours since opening in 2017
  • Serves ten or more original flavours that change daily, announced on a typewritten calendar hung outside the shop
  • Signature flavour is Icheon rice gelato, alongside named combinations such as 'cucumber and guava' and a date-palm flavour
  • Expanded from the original Yeomni-dong shop to a second location, 낱점, in Seongbuk-dong
  • Featured on the Korean variety show 틈만 나면 with Yoo Jae-suk and Yoo Yeon-seok around the second location's opening
  • Describes the daily-changing menu as a deliberate device for himself, comparing it to a painter's palette or a musician's instrument
