Bingsu is shaved ice, not ice cream. Does Seoul belong in this index at all?
Seoul's case cannot rest on patbingsu: the same reasoning that excluded kakigori from Tokyo applies here, and Korean sources describe even the modern 'snow-flake' style as milk or water frozen into a block and then mechanically shaved, not a churned or scraped frozen product. What the record instead finds is a small, recent cluster of maker-led gelato shops, almost all opened since 2017, that redirect the discipline through specific Korean ingredients rather than importing it wholesale: Zenzero's sorbets and gelati name Jeju carrots, Ulleung Island honey, Jiri Mountain chopi pepper and heirloom Chosun Hyangmi rice; Nokgijeon builds a signature flavour on Icheon rice and rewrites its menu daily; Ice Cream Society roasts its own pistachios in-store to avoid added colouring. This sits beside, and does not overlap with, Seoul's much larger mass-market soft-serve and franchise culture, which the record notes but does not select from absent a comparable craft or provenance signal.

Zenzero
gelato
A gelateria that names its provenance at the level of a single island or mountain rather than a country: Jeju carrots, Ulleung honey, Jiri Mountain mountain-pepper, a named heirloom rice. Opened in a small Gangnam alley in 2017 and now running two branches, it is the strongest ingredient-provenance case found in Seoul and the one place in this record independently profiled by both a national English-language newspaper and a Korean fashion magazine within the last two years.
