Zàgara is the most distinctive flavour-identity case in the set — named founders with non-catering backgrounds who chose to specialise, and a described technique (spatula-service) tied directly to a textural and aromatic claim rather than novelty for its own sake.

What we know

  • Founded 2019 by three friends — a gastronome, a biologist and a translator — after they left their previous Graefekiez ice cream jobs; opened Zàgara at Schlesisches Tor (Creme Guides, tip Berlin)
  • tip Berlin reports the founders deliberately immersed themselves in Milanese ice cream craft ("Mailänder Eiskultur") before opening, and serve ice cream 'gespachtelt' (spatula-packed rather than scooped) for a fluffier, more aromatic result — a claim not repeated in Creme Guides' independent account of the same shop
  • Distinctive, changing flavours: Guinness ice cream, Sicilian almond with carrot, and a dark chocolate with beetroot that started as an Ice Cream Week special and became permanent (Creme Guides)
