What we know

  • Gelato made daily on-site in the historic laboratory at Via dei Tavolini, using only eggs, milk, cream and sugar plus seasonal fruit, chocolate, nuts and spices, per the Florentine historic-business association's own listing (esercizistoricifiorentini.it)
  • Founded 1939 by Sig. Ravaioli, who with his wife Maria became known during WWII for spumoni made despite wartime shortages of raw materials
  • The shop's clock, added in 1950 by Florentine mosaic master Giovanni Fiaschi, remains its symbol today
  • Run by the Cammilli family — Paola, her husband maestro gelatiere Ciro, and daughters Cecilia and Valentina. The takeover year is unsettled: the historic-business register says 1991 and a TuscanyPeople piece says 1992, and both trace back to the shop rather than to an independent check.
  • Formally registered as one of Florence's protected 'esercizi storici e tipici fiorentini' (historic and typical Florentine businesses)
  • Daily production stated by the maker: Ciro Cammilli, 'Facciamo il gelato ogni giorno, usando il minor numero di ingredienti possibili, senza coloranti' — with lemons prepared the same day against oxidation, and some flavours appearing only on certain days of the week as a consequence
