il laboratorio del gelato

Twenty-four years of one maker's single production kitchen on Ludlow Street, still making everything by hand in small batches and still supplying the city's own restaurant kitchens. Jon Snyder had already built and sold one gelato company before he opened this one alone in 2002; the nuts are roasted and the fruit processed on the premises.

What we know

  • Everything is made by hand in small batches in the Ludlow Street kitchen, which also supplies the newer Upper East Side counter
  • Nuts are roasted in-house and fruit is juiced, peeled, pitted or cored from scratch, batch by batch
  • Snyder co-founded Ciao Bella in 1984, sold it in 1989, and started again alone thirteen years later with no connection to the first company
  • Around thirty-six flavours are out at a time, drawn from a far larger working repertoire — cheddar, olive oil, beet, wasabi, mastic, hawaij
  • The wholesale side supplies New York restaurant kitchens, which is what the shop was built to do
