A trained chef using French ice-cream technique deliberately in the service of ingredients nobody expects to be frozen — camote, tuna, elote. It is the clearest case in the city of an outside method bent toward Mexico instead of Mexico being fitted to the method.

  • A corn flavour made each September for the independence holiday, which people cross the city for
  • A tuna sorbet coloured by the cactus fruit itself, and a camote flavour built on the whistle of the roving sweet-potato carts
  • French technique — the founder trained in pastry in New York and in ice cream in Corsica — turned on Mexican ingredients rather than the reverse
  • Vacherins, the French meringue and ice-cream cake, sold alongside the sorbets
