Cappadonia is the counter-case inside a granita city: a Palermo gelateria with a nine-year, still-current national award, built on ingredient provenance named down to the town of origin, that has quietly redefined its own fruit-ice line as something other than granita. It makes the city's central tension — gelato as spectacle versus granita as daily bread — visible inside a single shop.
