The shop that made Straus organic dairy and named-farm seasonality the default expectation for San Francisco ice cream, not just a good version of it. It has kept the same production model for twenty years and documents its own history, including the year it closed for a mandated seismic retrofit and ran a solar ice cream truck to keep serving its neighbourhood.
