Artico
Poloni's path runs through two family and small-town gelaterias before Artico, and the company he built afterwards trains other operators rather than only selling gelato - an explicit claim to specialist authority beyond one counter, corroborated by press coverage of the Tre Coni win.
What we know
- Poloni began working in gelato in 1980 and, with his father-in-law - also a maestro gelatiere - took over what is still the family's historic gelateria in Novate Milanese; he separately ran a gelateria in Cormano for more than five years before co-founding Artico in 2012 with a group of friends and partners (Artico's own site)
- One of six gelaterie in the comune of Milano awarded Gambero Rosso's Tre Coni in the 2024 guide (Gambero Rosso International); now operates four Milan points of sale (Isola, Duomo, Citta Studi, Solari) (Il Giorno)
- Runs its own training school for gelato-shop operators, founded 2016, credited with supporting roughly 100 new gelato shop openings (Artico's own site)
- Chocolate range built around single-origin dark chocolate at several percentages plus milk and white variants; pistachio cream is enriched further with oil, salt and pepper (Il Giorno; Dissapore)
- Full range of lactose-free and vegan alternatives held to the same stated standard (Il Giorno)
