Melbourne trained in Italy; Sydney built a chain the world copies. Which is the better claim?
Sydney's clearest claim on the world stage is a business model, not a technique: Gelato Messina, founded in Darlinghurst in 2002 when Nick Palumbo moved from Adelaide with twenty basic flavours, built the flavour-rotation, dessert-bar, everything-made-in-house format that gelato brands elsewhere now visibly imitate. That claim sits differently from Melbourne's Italy-trained revival - Messina's own site documents a chocolate-making machine imported from Italy and installed in Marrickville, not a founder returning from an apprenticeship in Bologna or Rome. Inner Sydney also carries an independently judged claim: Cow and the Moon, a family gelateria John Crowl opened in Enmore in 2011 after learning the trade in a Milanese gelateria, beat two Italian gelato makers to win the Gelato World Tour's world title in Rimini in September 2014 with a single flavour, Mandorla Affogato. And Ciccone & Sons in Redfern stakes its identity on the plainest possible signals instead of scale - a box freezer scooped top-down, Jersey milk, and a gelatiere with twenty-five years at the machine, styled deliberately after 'a 1950s gelateria you'd discover in the winding, pastel-hued streets of Bologna.' Whether a chain the world copies is a stronger claim than a city that imported technique wholesale is the open editorial question this record exists to test.
