A slice of bread folded round a slab of ice cream is Singapore's own. Is one idea enough?
Singapore's claim rests on two things nowhere else has together: a still-surviving, licence-capped tradition of mobile hawkers slicing rainbow-bread ice cream sandwiches on the street, and a young generation of makers building genuinely Southeast Asian flavour identities on top of it. Uncle Chieng has sold from the same Orchard Road spot since 1993 and been in the trade since 1965, one of only seven hawkers left with an islandwide licence that Singapore no longer issues. Behind the carts sits Hong Kong Creameries, a 1955 family manufacturer still salt-freezing potong in coconut, red bean, durian and yam by hand. And in the last decade, Birds of Paradise and DOPA have built serious gelato identities — botanical Southeast Asian flavours infused from real ingredients, and a nut-based house that mills its own pastes — that argue Singapore's ice-cream culture is not just nostalgia under glass.
