Can a city with no centre and every diaspora produce one ice-cream culture?
Los Angeles has no single ice-cream lineage the way Rome or Bologna does, but it has more coexisting ones than almost any city on earth, and each is specific rather than generic. Mashti Malone's has sold Persian bastani in saffron and rosewater from the same Hollywood strip mall since 1980, run by a family whose ice-cream name was famous in Iran before the revolution sent them to California. A few miles east, Bumsan Organic Milk Bar imports milk from Korea's largest organic dairy to make Koreatown soft serve that Eater LA has called the neighbourhood's undisputed leader. A paletero from Oaxaca, a Filipino-American food scientist, and the sons of a Thai restaurant family are each running a named, distinctive, on-the-record ice-cream business inside the same city limits. The case for Los Angeles is not one culture but an unresolved argument between several — which is exactly the question this record leaves open rather than answers.
